Flaxseed Pancakes

We seem to eat a lot of pancakes around here. I always add flax seed to them so they are "healthy", right?! I have also made buttermilk pancakes from scratch, which are yummy. However, after reading MckMama (yes I check out her blog) I discovered you can throw in some extras and have really really yummy pancakes, even better than homemade buttermilk ones - and you do not have to have buttermilk on hand!

I did not have the exact ingredients that MckMama (yes, her pseudo blog name if you do not already know - I could not make that up) did. So, I improvised with the following:

And they were delicious. At least the kids and I thought so!
I started with 2 cups of store bought pancake mix and about 1/2 cup flax seed. Just mixed in 1 egg, a bit of honey (a little less 1/4 cup), dash of cinnamon, a 1/2 tsp of almond extract, a bit of yogurt (all I had was baby strawberry/banana), about 1 Tbs. of oil, and desired amount of water of consistency.
Really put in whatever sounds good. I never would have tried this myself as I am not much of a cook, but they were pretty good if I do say so myself!

Kudos to Dr. Oz - Stem Cell Research

This post is a bit "dated" - But I was thrilled to see someone actually state (even on Oprah) how promising the adult stem cells are for curing certain diseases! The media ALWAYS neglects the information of the achievements of adult stem cells.
Watch Dr. Oz on Oprah with Michael J. Fox - who dispite my difference of opinion with him on the issue I will forever love Family Ties and you can tell he is a kind person - just wrong on this issue! ha, ha!

Tulip Festival

We will be traveling to Holland this summer, well, Holland, Michigan that is. Too bad we will have missed their Tulip Festival. Oh, well, we will be there in July - traveling north in July sounds good to me!

Point of Grace

Today was our last day of MOPS for the year. The theme verse for the children was taken from Ephesians 3:18-19 (Catholic Bible) or (Prodestant Bible). Anyway, our 2 year old (nearly 3!) Lydia just loved singing the song to go with the verse - they did a "kiddo" version! Point of Grace sings more the real thing! I am telling you I am loving THIS SONG! It is from their Girls of Grace album.
