Flaxseed Pancakes

We seem to eat a lot of pancakes around here. I always add flax seed to them so they are "healthy", right?! I have also made buttermilk pancakes from scratch, which are yummy. However, after reading MckMama (yes I check out her blog) I discovered you can throw in some extras and have really really yummy pancakes, even better than homemade buttermilk ones - and you do not have to have buttermilk on hand!

I did not have the exact ingredients that MckMama (yes, her pseudo blog name if you do not already know - I could not make that up) did. So, I improvised with the following:

And they were delicious. At least the kids and I thought so!
I started with 2 cups of store bought pancake mix and about 1/2 cup flax seed. Just mixed in 1 egg, a bit of honey (a little less 1/4 cup), dash of cinnamon, a 1/2 tsp of almond extract, a bit of yogurt (all I had was baby strawberry/banana), about 1 Tbs. of oil, and desired amount of water of consistency.
Really put in whatever sounds good. I never would have tried this myself as I am not much of a cook, but they were pretty good if I do say so myself!

Hey, we use that same pancake mix at my house! But we put M&Ms in ours. Not very healthy, but definitely delicious! LOL! Thanks for sharing this. I am not an adventurous cook and would be scared to venture out into new territory. Good for you!
